Nordic lemon at the Nobel dinner this year again!

During yesterday's magnificent Nobel Banquet, the Nordic lemon quince was highlighted not just once but twice. This fantastic fruit made its mark in both the appetizer and the dessert, once again demonstrating its versatility and rich flavour.

The appetizer was a delicate combination of goat cheese from Östergötland filled with lovage. It was served with Swedish beets, honey, quince and roasted pumpkin seeds. The subtle tartness of the quince perfectly complemented the natural flavours of the ingredients.

The dessert was a variation on Swedish apples and a celebration of seasonal flavours. A terrine of caramelized Frida apples, browned butter cake made with tiger nut and flavoured with spruce shoots, quince cream and thinly sliced apples with a hint of chamomile were all beautifully arranged. The dish was completed with a scoop of sweet woodruff and punch-flavored ice cream.

It is inspiring to see how quince was elevated at the Nobel Banquet. This is a brilliant example of how local ingredients can be used in modern and innovative cooking to create memorable flavours.
